Ingredients

3 tbsp. meringue powder (this is found in specialty cake shops, but Wal-Mart also has the Wilton canister in the crafts department. It can be used as an egg white substitute in any recipe.)
6 tbsp. water
1 c. powdered sugar
1 c. powdered almonds
1/4 to 1/3 c. flour (for desired consistency)
1 tbsp. cocoa powder
1 tsp. almond extract

Directions

Preheat oven to 325 F. Line a baking sheet with parchment paper. Whip the meringue powder and water together to form stiff peaks. Add half the powdered sugar and almond extract, and continue whisking until shiny. Separately combine the rest of the sugar, almond powder, and cocoa powder. Add the flour for desired consistency. It must be light but not too runny, but it should not be too thick. Use a pastry bag with tip # 10 or just the adapter to make small circles on baking sheet. Here you must be quick, so that the batter does not spread out too much before you put it in the oven. Bake for 15 minutes. Let cool a few minutes, before transferring to wire rack.
