Homemade Soaked Granola

Ingredients

2 1/2 cups oats

1 3/4 cup buttermilk

1/2 cup butter

4 eggs beaten

1/2 cup maple syrup

1 teaspoon baking powder

1/2 teaspoon salt

2 teaspoons cinnamon

2 teaspoons vanilla

2 cups dried fruit

2 cups chopped apple

Directions

Soak the oats in the buttermilk overnight on the counter, lightly covered.  The next morning, place 1/2 cup butter in a baking pan and place it in the oven.  Pre heat the oven to 350.  While the butter is melting, mix the eggs and maple syrup.  Add the baking powder, salt, cinnamon & vanilla.  Beat until well mixed.  Stir in the soaked oats, the dreid fruit and the chopped apples.  Pour into the baking dish with the melted butter.  Bake at 350 degrees for 30 minutes.

 

Cool completely and then crumbled the baked oatmeal into granola bite sized pieces.  Add more dried fruit or nuts and seeds if you want.  Place the crumbled oatmeal into a 300 degree oven and bake unitl crispy.  Watch this closely, checking and stirring every 15-20 minutes.

Cool completely and store in an air tight container.
