Ingredients
This is a definite kid pleaser in my household.
1 lb ground meat (chicken, turkey or pork)
1 egg
1/2 c. Italian breadcrumbs
2 tbsp. olive oil
1 onion chopped
2 carrots, finely chopped
3 celery stalks, finely chopped
1 zucchini, finely chopped
1 c. frozen peas
10 cups chicken stock
salt, pepper to taste
1/2 pkg of desired short pasta
Spinach leaves
Directions
Mix ground meat with egg and breadcrumbs; form into little meatballs about 1/2". Boil some water in saucepan. Meanwhile, in a large saucepan, heat the oil. Add onion and cook until translucent. Add remaining vegetables and cook a few minutes. Add stock and bring to a boil. When the water in the other saucepan is boiling, add the meatballs for a few minutes to extract some of the meat fat. Then transfer to the soup. Reduce heat and let simmer for about 30 minutes. Season to taste. Prepare pasta per package instructions separately. Serve pasta in bowl and pour soup on top. Soup can easily be frozen without the pasta. (Thawed pasta can turn mushy and break apart in the reheating)
