Ingredients

1 kg onion, sliced
100 ml olive oil
1 tsp. sea salt
1/2 tsp. black pepper
1/2 c. brown sugar
75 ml dry white wine
75 ml red wine vinegar
25 ml balsamic vinegar
Herb of choice

Directions

Cook onion in olive oil. Add the herbs, salt and pepper, cook. Add the rest of the ingredients and bring to a boil. Reduce heat and let simmer until liquids evaporate and gets a little sticky. Store in sterilized jars in the fridge. Best several days later. White wine may be substituted for other liquor to taste. Why not?
