Ingredients

  1. 2 cups all-purpose flour
  2. 2 tablespoons granulated sugar
  3. 1 1/2 tablespoons baking powder
  4. 1/2 teaspoon salt
  5. 2 eggs
  6. 2 cups milk
  7. 4 tablespoons butter, melted
  8. 1 teaspoon vanilla extract
  9. food coloring in assorted colors

Directions

  1. Preheat oven to 200 degrees. Prepare pancake griddle or skillet.
  2. Combine all dry ingredients in a large bowl and set aside.
  3. Combine all wet ingredients in a small bowl and add to dry mix all at once. Stir to combine; batter will be lumpy.
  4. Divide batter evenly into six cereal-sized bowls. A ladle works well for this.
  5. Add 2-3 drops of food coloring to each bowl and stir gently to combine. This is a great opportunity to discuss colors and and how to use two colors to make one with your child.
  6. Drop approximately 1/4 cup of batter onto a heated pancake griddle or skillet. Cook about 2 minutes on either side. Place finished pancakes on a sheet tray in the preheated oven to stay warm while cooking the remaining batter.

Tip: Serve rainbow pancakes with equally-colorful sliced fruit.
