Sour Cream Chocolate Chip Muffins

Ingredients

1 c. sour cream (or yogurt)
1 tsp. baking soda
1/4 c. brown sugar
1 egg
1/2 c. canola oil
1 c. bran
1/4 c. ground flax
1 tsp. vanilla
1 c. flour (I like to use Robin Hood Nutri for these things)
2 tsp. baking powder
1/4 tsp. salt
1/2 c. chocolate chips (may be substituted by nuts or dried fruit)

Directions

Mix sour cream and soda. Separately, mix sugar, egg and oil. Add vanilla, bran and flax. Add flour, baking powder, salt, alternating with sour cream mixture. Bake at 350 F for 20 to 25 minutes, until done. Gives 12 muffins.
