Ingredients

  • 1 16 oz. can refried beans
  • 1 pkg. 25 Deli Mex taquitos (any flavor)
  • 1 pkg rice (cooked accordingly)
  • 1 12 oz. container of sour cream
  • 1 16 oz. can rotel
  • 1 16 oz. can green enchilada sauce (you will only use half)
  • salt & pepper to taste
  • onion to taste
  • 1 cup cheese (any flavor)

    • Directions

    • Preheat Oven to 350 degrees
    • Spread entire can of refried beans over bottom of baking pan
    • Place frozen taquitos directly on top of refried beans
    • Spread "cooked" rice over taquitos
    • Mix together rotel, sour cream, half green enchilada sauce, salt & pepper and onion - pour and spread over rice.  Bake 20 minutes until the mix of everything is bubbling.
    • Sprinkle with cheese & bake 5 more minutes.
