Ingredients

1/2 lb. elbow macaroni

2 1/2 c low-fat milk

2 tbs cornstarch

1/2 tsp salt

1/4 tsp black pepper

4 slices velveeta american cheese

1 1/2 c. shredded sharp cheddar cheese

1/4 c. grated parmasean cheese

1/4 c bread crumbs

 

Directions

  1. Preheat oven to 400 degrees.  Bring water to boil in a large stockpot and cook macaroni until tender BUT firm. Drain set aside.
  2. In a small saucepan, heat 2 cups milk until hot BUT not boiling. 
  3. In a medium saucepan, whisk 1/2 cup milk and cornstartch, add hot milk and velveeta cheese and whisk constantly until boiling, then remove from heat.
  4. Grease a 2 quart shallow baking dish and add half macaroni, half parmasean, half cheddar and half milk mixture and then repeat.  Sprinkle Bread crumbs on top.
  5. Bake for 20 minutes or until hot and bubbly.
