Ingredients

2 pounds dry pinto beans, washed and drained

1 large onion chopped

1/2-1 jalapeno seeded and chopped

4 large cloves of garlic minced

1 heaping Tablespoon chili powder

1 heaping teaspoon ground cumin

1/3 cup olive oil

2 Tablespoons salt

2 teaspoons ground black pepper

8-10 cups of water, enough to cover the beans

Directions

Add all ingredients to a crockpot and cook on low all day or on high 4-6 hours. 

These beans are so versitile, you can spoon them into bowls and serve with thick slices of cornbread or spread into taco shells or mash them and use them for refried beans.

  These make the best refried beans!  So easy, inexpensive and fresh.  I mash them or run them the food processor and freeze them in gallon size bags.
