Taco Filling Stuffed Peppers

Ingredients

1.5 lb. ground beef (I use 80/20 chuck, it has more flavor)
2 onions chopped
5 cloves garlic chopped
olive oil
a big pinch each of paprika, chili powder and cayenne pepper
32 oz. can of diced tomatoes
a couple of dashes of chipotle Tabasco sauce
1 cup dry rice
8 peppers cut in half, stemmed and seeded (I don’t like cooked green bell peppers, so we used orange, red and yellow)
goat cheese

Directions

Prepare the rice according to package directions.

In a large pan, heat up the oil and add the onion and garlic and saute until translucent.

Add the beef and dry spices and cook until browned.  Add the rice to the beef mixture.

Then add the diced tomato and tabasco sauce

Preheat the oven to 350 degrees and line a baking sheet with aluminum foil.  Place the peppers cut side up and fill with the beef mixture.  Crumble goat cheese on top

Cook for 15-25 minutes until the peppers are slightly softened and the cheese is as brown as you like.

This was so delicious!  Truly comforting food. We served it with a simple tossed salad and it was perfect!
