Ingredients

Pesto Ingredients:

1 cup fresh basil tightly packed
3 cloves garlic
1/2 cup pine nuts
1/2 cup grated Parmesan cheese
1 teaspoon kosher salt
1/2 cup extra virgin olive oil

Panini Ingredients:

1 tablespoon olive oil
2 slices of your choice of bread (sourdough is a safe choice)
2 tablespoons pesto
sliced mozzarella cheese, enough for two thin layers on sandwich
sliced tomatoes, enough for one layer on sandwich

Directions

Pesto Directions:

  1. Wash and dry the basil.
  2. Place basil, garlic, pine nuts, parmesan cheese and salt in a food processor.
  3. Chop until the ingredients are paste-like.
  4. Pour in oil while the food processor is running.

Panini Directions:

  1. Brush olive oil on the outside of each piece of bread.
  2. Assemble sandwich as follows: 1 slice bread, 1 tablespoon pesto, 1 layer of mozzarella, 1 layer of tomato, 1 layer of mozzarella, 1 tablespoon of pesto, 1 slice of bread.
  3. Place sandwich on a panini press for 4 to 5 minutes, until bread is golden and cheese is melted. If you do not have a panini press, place in a hot oven on a baking sheet for approximately 10 minutes at 425 degrees, flipping after 5 minutes.

Note: If you want more of a meaty panini, this recipe works well with chicken and turkey.
